Taco Peppers – Perfect for Taco Tuesday!
This is a go to for low carb gluten free taco night. Quick and easy. It’s a family favorite. I make enough for leftovers to take to work.
Ingredients
• 6 Fresh Peppers
• Plant Boss Plant Taco Mix
• Daiya Cheese
• Black Beans
• Shredded Lettuce
• Diced Tomato
• Guacamole ( I use Wholly Guacamole)
Directions :
Preheat oven to 350 degrees. Cook veggie taco meat as instructed on package. I really like the Plant Boss because they have much better ingredients than most veggie alternatives. Add veggie meat, black beans, and cheese to peppers. Bake for about 20 minutes. Add shredded lettuce, guacamole, and diced tomato. Voila!
