Chickpea Salad Sandwich – Gluten Free and Vegetarian
Chickpea Salad Sandwich
Ingredients:
- Can of chickpeas, rinsed and drained
- Mayo, I use plant based, 1/2 cup
- Paprika 1 tbsp
- Dill relish 1/4 cup
- 1/4 purple onion
- Half an avocado (optional, makes it creamier)
Put all ingredients in food processor and blend until creamy. Serve on gluten free bread with lettuce and tomato or with gluten free crackers.
I don’t really measure the ingredients. I add mayo until it is as creamy as I like, probably about half a cup. The relish and paprika I add until it has enough kick. Add to your preference.
